Thyme Roasted Sweet Potatoes

A quick and easy recipe for thyme roasted sweet potatoes with goat cheese and dried cranberries

Ingredients
  

  • 2 large sweet potatoes
  • 1 medium red onion
  • 3 tbsp olive oil
  • 1/2 tsp dried thyme
  • salt and pepper
  • 1/4 cup goat cheese crumbles
  • 1/4 cup dried cranberries

Instructions
 

  • Preheat the oven to 450 degrees.
  • Peel and cube 2 large sweet potatoes. Something between "so tiny they will burn in five minutes" and "small enough that they won't take all night to cook" is good. Check out the photo.
  • Put the cubed sweet potatoes in a large bowl.
  • Slice a medium red onion.
  • Add the onion to the bowl with the potatoes.
  • Toss the sweet potatoes and onion in olive oil until coated.
  • Put the sweet potatoes and onion onto a rimmed baking sheet. I use a slotted spoon to avoid big puddles of olive oil on the sheet. Anyone else think this could cause a fire? Just me?
  • Sprinkle the sweet potatoes and onion with salt, pepper, and the 1/2 tsp of dried thyme.
  • Bake until you can easily pierce the sweet potatoes with a fork, about 20 minutes.
  • Carefully transfer the baked veggies to a heat resistant dish.
  • Sprinkle with the goat cheese crumbles and dried cranberries.

Notes

This recipe made four side dish servings for us, but if you are a big eater, you may wish to double the recipe.
