A Delicious Winter Side Dish: Thyme Roast Sweet Potatoes

Like a lot of people, I’m not a perfect eater. I would describe myself as healthy-ish. One of the big advantages of cooking pretty much all of our food myself, though, is that we are able to avoid lots of highly processed foods. The area I’m really trying to make improvements in is adding more fruits and vegetables to our diet. Our vegetables have generally been limited to a nightly salad and while that’s good, it’s also boring. I think we are probably missing some nutrients, as well. That’s where these delicious thyme roasted sweet potatoes come in. Warm, slightly sweet and topped with tangy goat cheese and tart dried cranberries, this is the perfect winter side dish. 

Kicking Up My Sweet Potato Game

I absolutely love sweet potatoes. In fact, they are one of the few cooked vegetables I really enjoy. Oven-roasted “fries” are my general go-to: sweet potato wedges coated in olive oil and sprinkled with salt, pepper, and paprika. These thyme roasted sweet potatoes are really a step above. 

Ready in So Few Steps!

To get started, peel and cube two large sweet potatoes and set them aside in a large bowl. After that, slice up a medium red onion. I think red onions give such great flavor and they really pair well with sweet potatoes. Toss the onions into the bowl with the sweet potatoes and coat everything with a little olive oil. Spread out the onions and potatoes on a rimmed baking sheet and sprinkle with salt, pepper, and thyme. I try not to let a lot of excess olive oil get onto the pan. I somehow envision it all bursting into flames. Hello, anxiety.

Thyme Roasted Sweet Potatoes for the Win

One of my pet peeves with sweet potatoes is that they take so long to bake. These, however, go into a 450 degree oven until the potatoes are tender, about 20 minutes. Put the veggies into a heat resistant serving dish and toss with goat cheese and dried cranberries to finish.

I don’t know about you, but these thyme roasted sweet potatoes will definitely be showing up on our dinner table a lot this winter!

Thyme Roasted Sweet Potatoes

A quick and easy recipe for thyme roasted sweet potatoes with goat cheese and dried cranberries

Ingredients
  

  • 2 large sweet potatoes
  • 1 medium red onion
  • 3 tbsp olive oil
  • 1/2 tsp dried thyme
  • salt and pepper
  • 1/4 cup goat cheese crumbles
  • 1/4 cup dried cranberries

Instructions
 

  • Preheat the oven to 450 degrees.
  • Peel and cube 2 large sweet potatoes. Something between "so tiny they will burn in five minutes" and "small enough that they won't take all night to cook" is good. Check out the photo.
  • Put the cubed sweet potatoes in a large bowl.
  • Slice a medium red onion.
  • Add the onion to the bowl with the potatoes.
  • Toss the sweet potatoes and onion in olive oil until coated.
  • Put the sweet potatoes and onion onto a rimmed baking sheet. I use a slotted spoon to avoid big puddles of olive oil on the sheet. Anyone else think this could cause a fire? Just me?
  • Sprinkle the sweet potatoes and onion with salt, pepper, and the 1/2 tsp of dried thyme.
  • Bake until you can easily pierce the sweet potatoes with a fork, about 20 minutes.
  • Carefully transfer the baked veggies to a heat resistant dish.
  • Sprinkle with the goat cheese crumbles and dried cranberries.

Notes

This recipe made four side dish servings for us, but if you are a big eater, you may wish to double the recipe.
