As with all of my recipes, Easy Tuscan Herb Butter is super easy to make with no complex cooking techniques, no special equipment, and with simple ingredients you can find in any grocery store.
Recipe Ingredients
1 cup salted butter (softened to room temperature)
3 tbsp chopped sun-dried tomatoes
1 ½ tbsp basil (chopped)
1 large garlic clove
Zest of one lemon

- Stand mixer with paddle attachment/electric mixer

- Small bowl or storage container
Ingredient Notes
Butter: Use salted butter so you won’t have to have to worry about adding salt.
Basil: I couldn’t find fresh basil in the supermarket, so I used “lightly dried” basil – something between fresh and dried. It was flavorful and I won’t need to use it all up in the course of just a few days. If you are using fresh basil, you can increase the amount to 2 tbsp.
Step-by-Step Instructions
1. Chop your ingredients, setting each aside until they are all prepared.
2. Mince one large clove of garlic.
3. Zest one large lemon.
4. Chop the sun-dried tomatoes.
5. Measure out the basil.

6. Add the softened butter to the bowl of a stand mixer fitted with a paddle attachment.
7. Mix the butter until very smooth, about 2 minutes.
8. Using a bench scraper, scoop up all of your prepared ingredients and add them to the butter.

9. Mix until just combined.

10. Scoop the prepared herb butter into a bowl of storage container and refrigerate until firm.

Storage
Store the completed herb butter in an airtight container in the fridge for 7-10 days.
Tips & Tricks
If you find your butter is slightly firm (although it really has to be at least softened to room temperature), you can cut it into roughly tablespoon size pieces and mix until creamy.
You can also store the herb butter by dividing it in half and rolling each half into a log. Use parchment paper to do the rolling and then store each butter log in the parchment paper in the fridge.
