Recipe Ingredients
- All purpose flour
- Cornstarch
- Baking powder
- Baking soda
- Butter
- Brown sugar
- Overripe bananas
- Vanilla extract
- Eggs
Ingredient Notes
Cornstarch – Adding cornstarch to the flour helps develop a tender crumb.
Butter – I almost always use salted butter. Be sure it is at room temperature.
Eggs – Should also be at room temperature.
Overripe bananas – Overripe bananas are full of sugar and give the whoopie pies that rich banana flavor.
Step-by-Step Instructions
Step 1. Preheat the oven to 350 degrees.
Step 2. Line two baking sheets with parchment paper.
Step 3. In a medium bowl, mash the overripe bananas. You can use a potato masher if you have one, but a fork will work fine. Set aside.
Step 4. In a large mixing bowl, whisk together the flour, cornstarch, baking powder, and baking soda. Set aside.
Step 5. Add the softened butter and brown sugar to the bowl of a stand mixer. Use the paddle attachment and cream the butter and sugar on medium speed until light and fluffy, about 2-3 minutes. NOTE: You can use an electric mixer or even a spoon if you do not have a stand mixer.
Step 6. Add the mashed bananas. Mix until just combined. The batter may not look very good at this point, but it will all come together when you add in the dry ingredients.
Step 7. Add in the vanilla extract and mix just a little bit until combined.
Step 8. Mix in one egg and one egg yolk until incorporated.
Step 9. Slowly add the dry ingredients to the wet ingredients mixing over low speed until just combined. Be sure to scrape down the sides to fully incorporate the dry ingredients.
Step 10. Use a medium cookie scoop to place the dough on the prepared baking sheet. Leave about one inch between the cookies. The top of the cookies will dome up, so be sure you have enough room above the trays.
Step 11. Bake for about 14 minutes, rotating the trays midway through the baking time. The cookies will be golden brown when ready.
Step 12. Remove the cookies to a wire rack to cool completely.
Step 13. Once the cookies are cool, create a sandwich by spreading Nutella on the flat surface of one cookie and placing another on top.

Tips & Tricks
Room temperature ingredients: Butter and eggs should be at room temperature for the best results.
Cornstarch: You can make these without the cornstarch, but it really works to create soft banana cookies.
Mashing bananas: I mash bananas with a fork, but you can all use your electric mixer.
Don’t over mix: It is always a good practice to mix only until your ingredients are combined. Over mixing results in a tough cookie.
FAQs
Can I fresh/ripe bananas?
Using fresher bananas isn’t recommended. They are not as sweet – or as easy to mash – as overripe bananas.
What other types of filling can I use?
