Cookie Ice Cream Sandwiches That are More Than Good Enough
Do you know why this account is called Good Enough? Because I just won’t take 500 photos of cookies to get the perfect one. I don’t use anything to edit them (I’m sure you’ve noticed) and I don’t make recipes over and over again. If a recipe isn’t good, of course, I throw out the product and start over. But I just don’t have the time or the energy to drive myself crazy making things look perfect. It’s food. The most important thing is that it tastes good. Cookie Ice Cream Sandwich Deliciousness
I bring this up because as I looked at my photo, I felt that it was far from perfect. The chocolate chips aren’t totally even. There are loose chips on the plate. It is about 85 degrees right now, though, and we didn’t turn on the air conditioning. We try to be good environmental citizens and save the A/C for horrible days. That said, the sandwiches were kind of melting all over. I had to take the pictures and get them back in the fridge. Does that take away from the deliciousness of this cookie ice cream sandwich? No; it does not.
Vive Le Petit Ecolier!
Have you ever had a Petit Ecolier cookie? They are a pretty plain cookie topped with a slab of chocolate. Let me repeat: a slab of chocolate. The cookies are French, but easily found in the US. I love them, but don’t eat store bought cookies often. That is, unless I want to make an amazing dessert out of them.
Cookie Ice Cream Sandwich with Homemade Ice Cream
I made my standard ice cream recipe for these: sweetened condensed milk, whipped cream, vanilla. This doesn’t require an ice cream maker or any weird shaking; no churning of any type. As though the chocolate slab were not enough, I added mini chocolate chips to these.
Put it All Together
To make the cookie ice cream sandwich, I laid out an even layer of cookies in an 11X7 inch pan lined with parchment paper.. That is an odd size, so you can use something a bit bigger or smaller and adjust your amounts accordingly. I need twelve cookies on the bottom. Then I spread the ice cream evenly over the top. Finally, I made a top layer of cookies. Pro tip: don’t test the cookies before you begin. I shared some with my husband and I was three cookies short. I covered the pan with aluminum foil and popped everything into the freezer overnight. The next day, I cut the squares and rolled the sides in the rest of the mini chocolate chips.
The Photos May be Bad, but the Cookie Ice Sandwiches are Not!
I hope you won’t be insulted that I don’t care enough to take photos all day, but life is short and I just don’t have that kind of time. There are delicious cookie ice cream sandwiches to be eaten, after all! Good enough.
Cookie Ice Cream Sandwiches
Ingredients
Ice Cream
- 14 oz can of sweetened condensed milk
- 1 tsp vanilla
- 10 oz bag mini chocolate chips 1/2 cup in ice cream
- 2 cups heavy whipping cream
Cookies
- 12 Le Petit Ecolier cookies
Instructions
- Line an 11×7 glass pan with parchment paper. Hold the paper in with binder clips. If you wish to use a larger pan, you will need more cookies!
- Line the pan with even rows of cookies, chocolate side UP. I used 12 cookies: 3 across and 4 down. They fit perfectly.
- In a medium bowl, combine the sweetened condensed milk, vanilla, and 1/2 cup of chocolate chips. Stir to combine.
- Using the whisk attachment, beat two cups of heavy whipping cream until stiff peaks form, about 2 minutes on medium high speed. Be careful not to whip too much or you will make butter.
- Fold the whipped cream into the sweetened condensed milk until completely combined.
- Spread the ice cream mixture evenly over the cookies. If you use this size pan, you will have extra that you can freeze as ice cream.
- Top with an even layer of cookies in the same pattern as those on the bottom. This time, the chocolate will face DOWN.
- Cover with aluminum foil and freeze until firm, about 8 hours.
- When the ice cream is frozen, lift everything out using the edges of the parchment paper.
- Cut into individual sandwiches.
- Pour the remaining chocolate chips into a dish. I used a pie plate. Roll the sides of the ice cream sandwiches in the chocolate chips.
- Return to the freezer until ready to eat.
