Holiday Chocolate Mousse Pie

For both religious and secular reasons, Easter is my favorite holiday. The weather is (usually) nicer. Things are blooming. There is chocolate. And while I love chocolate eggs and bunnies, there is probably only so much of that you can eat. Which is where this deliciousness comes in: chocolate mousse pie.

Chocolate mousse pie is, quite simply, several different ways of eating chocolate at once. The base is a crispy, no bake Oreo cookie crust. The filling is a tangy, no bake, chocolate cheesecake type mouse. Finish it off by decoratively tossing some chocolate candy on top.

Quick and Easy Chocolate Mousse Filling

You can make your own Oreo pie crust in just a few minutes. To be honest, though, I used a premade Oreo one this time. I do generally make my own but sometimes I think…why? The one I purchased was great and my husband was so busy devouring the delicious mousse, he didn’t even notice. The chocolate mousse filling is similar to a no bake cheesecake. It includes cream cheese, sour cream, and homemade whipped cream. Vanilla and a melted semi-sweet chocolate bar provide the filling.

Top Your Chocolate With…Chocolate

Let’s talk decoration for a second. I LOVE Cadbury Mini Eggs but this year, they were super hard to find. This is the first supply chain issue that really hurt me! I ended up using another brand’s candy coated eggs and they just weren’t the same. If you are lucky enough to find the Mini Eggs, I suggest using them to line the edges. If you’re feeling really ambitious, you can trim the pie with squirts of whipped cream and place the eggs on top. You could also chop them up and sprinkle them over the mousse. “Robin Eggs” candy (malted milk balls) would also be a nice addition.

Chocolate Mousse Pie

An easy recipe for no bake chocolate mousse pie

Ingredients
  

  • 8 oz cream cheese softened
  • 4 oz semi-sweet chocolate
  • 1/3 cup sour cream room temperature
  • 1/2 cup confectioner's sugar
  • 1 tsp vanilla
  • 1 cup heavy whipping cream
  • assorted chocolate candy decorations

Oreo Cookie Crust

  • 20 Oreo cookies
  • 5 tbsp melted butter

Instructions
 

  • You will need an Oreo cookie crust for this recipe. You can buy one premade (as I did this time) or make your own.
  • Here is how you make the crust.
    Crush 20 Oreo cookies. You do not need to remove the cream filling. You can crush them in a food processor or you can place them in a Ziploc and whack them with something heavy like a rolling pin.
  • Melt 5 tbsp butter. I do this in a heatproof dish in the microwave. It only takes 30-40 seconds.
  • Put the cookie crumbs into a bowl and toss with the melted butter.
  • When the mixture is moistened, place it all in an 8" or 9" pie plate. Begin by pressing the mixture in with your fingers, working along the bottom and up the sides. You can use a measuring cup to press everything in evenly and securely.
  • Set the crust aside.
  • Place the whisk attachment on your mixer.
  • Pour the one cup of heavy whipping cream into the mixer's bowl and whip at medium high speed for 2-3 minutes until firm, whipped cream peaks form.
  • The whipped cream is done when you can remove the beater and flip it over without the cream losing shape. DO NOT OVER MIX. If you mix cream too long, you will have butter.
  • Set this aside. If you don't have two mixing bowls, place the cream in another bowl while you make the rest of the filling.
  • Melt the chocolate in a microwave safe dish. I do this in 30 second increments, stirring between heating. It is usually still too hard to mix after the first 30 seconds.
  • Put the paddle attachment on the mixer and put the softened cream cheese, sour cream, confectioner's sugar, vanilla, and melted chocolate into the bowl.
  • Mix until thoroughly combined, scraping the sides and the paddle.
  • Add the whipped cream to the mixture. You can gently use the mixer to combine. When it is just combined finishing mixing with a spatula.
  • Pour the mixture into the prepared crust. Smooth out the surface with a spatula.
  • Decorate the top of your pie. You can use chopped chocolate, chocolate chips, white chocolate, malted milk balls…there are tons of choices!
  • Cover the pie lightly with foil or plastic wrap and let it chill thoroughly – about 4 to 6 hours.
