Beef and Broccoli Ramen

This week we experienced both spring and winter. New York has a hard time making up its mind like that. At present, we are immersed in winter, and as we reach the end of December, it looks like the cold will be sticking with us for quite some time. The chill air and the early nights call for warm, comforting meals like this hearty beef and broccoli ramen. The sauce is rich and slightly sweet with a tang from fresh, grated ginger and a touch of mustard. And since it only takes a few minutes to put together, it is the perfect weeknight meal to have while curled up under a blanket on the couch.

Prep the sauce, the meat, and the veggies before you start cooking since things move pretty quickly once you get going. Stay warm, friends!

Beef and Broccoli Ramen

An easy recipe for beef and broccoli ramen

Ingredients
  

  • 1 lb steak skirt steak or flank steak work well
  • 1 medium onion
  • 1 head broccoli
  • 2 pkgs ramen noodles
  • 2 tbsp olive oil

Sauce

  • 1/3 cup warm water
  • 1/3 cup low sodium soy sauce
  • 1/3 cup packed brown sugar
  • 1 tsp freshly grated ginger
  • 1/2 tsp mustard optional

Instructions
 

  • Prepare all of the ingredients and the sauce in advance.
  • Slice the steak into thin strips.
  • Chop off the broccoli florets and rinse.
  • Chop a medium onion.
  • Grate the ginger.
  • Make the sauce by mixing the warm water, low sodium soy sauce, and brown sugar. Stir until the sugar is dissolved. Add the ginger and stir. I like the little kick of mustard, so I recommend adding the 1/2 tsp. Set the sauce aside.
  • Boil eight cups of water for the ramen. You will start cooking the rest of the ingredients while it boils. When it is boiling, remove it from the heat. Put in two packages of ramen, WITHOUT the flavor packets. From time to time as you are working on the other ingredients, gently pull apart the noodles with two forks. Once the noodles are done (mine took about 5 minutes), you can drain them into a colander and set them aside until the other ingredients are ready.
  • Add one tbsp of olive oil to a frying pan. Brown the sliced steak on both sides, about 6 minutes.
  • Remove the steak and set aside.
  • Add another tbsp of olive oil to the frying pan. Add the onions and cook until translucent, about 3-5 minutes.
  • Add the broccoli florets to the onions. You can always add a touch more olive oil if the pan becomes dry.
  • Sauté the broccoli about 4 minutes.
  • Return the beef to the frying pan with the veggies.
  • Stir the sauce and then pour it over the mixture in the frying pan.
  • Let heat through 3 minutes.
  • Add the cooked ramen and toss. Let heat through another 3 minutes.
